Italian Sausage Crockpot Soup a Faery Favorite



Compliments of Mr. Dally my Noxer/Human hubby who attempted to stay out of the lime light.  We managed to capture him in one quick snap shot above with my Noxer sister Michelle from Colorado (Gossamer Faery).  Poor guy just can't catch a break from the Faery insanity!  He made about 6 batches of this amazing Italian Sausage Soup to feed the wild pack of Faery folks at our event.  He is a true gem taking all that time to test recipes and then to cook for two days.  In addition he helped make the homemade frosting for my cupcakes and also assembled a delicious cheese appetizer.  And last but not least he transported quite a few things to the event, stayed to help tear down, cooked breakfast for our Letterboxing house guests and even took us all out to dinner after the event.  And just think this was all after the bee sting incident (which his rear is still healing from).He is one in a million!
 
Italian Sausage Crockpot Soup

He used 1/4 lb to 1/2 lb of hot sausage mixed with the mild for the event.

1 1/2 lb bulk mild Italian sausage
1 large brown onion, chopped
1/2 teaspoon minced garlic (I use bottled)
2 medium carrots, chopped
1 stalk celery, chopped
1 (14 1/2 ounce) can Tomatoes, chopped & undrained
1 (8 ounce) can tomato sauce
1/2 teaspoon dried basil
1/2 teaspoon crushed dried rosemary
1 bay leaf
1 teaspoon crushed dried oregano
1/4 teaspoon crushed dried thyme
3 (14 ounce) cans chicken broth
1/2 cup orzo pasta
parmesan cheese, shredded

Directions:

1. Brown Sausage, Onion, & Garlic, drain.

2. In slow cooker add: Everything except orzo and Parmesan.

3. Cook on Low for 8 hrs or on High for 4 hours.

4. Set pot to high and add Orzo for 20 minute.

5. Serve with Parmesan Cheese in top
